Tucked away in the tranquil village of Nieu-Bethesda, Karoo Still is a boutique micro- distillery where craftsmanship meets creativity. Owner-run and hands-on, we produce small, distinctive batches of gin, coffee liqueur, rum, bitters, and the occasional seasonal creation—each bottle a reflection of our care, curiosity, and craft.

What Sets Craft Apart

A craft-distilled bottle often reveals its nature before the first sip. Unlike mass-produced spirits that are filtered, colored, and homogenized for absolute consistency, craft spirits may show slight variations in color, a natural haze, or even a trace of sediment— signs of authenticity rather than imperfection. These subtle differences reflect the hands-on process behind small-batch distilling: minimal filtration, real botanicals, and slow infusion. At Karoo Still, we embrace these nuances — each bottle is a one-of-a-kind expression without shortcuts or additives. Our Spirits

Gin

Gin (London Dry) – Classic and clean. Designed for the mixologist to build your signature pour.
Infused Gin – A modern Gin, layered with hints of citrus, rosemary, mint, and blueberry. Just add tonic and lots of ice.

Rum

First Rum is distilled from first principles: fermenting molasses (like pirates did in the Caribbean using dunder), double pot-distilled in our own mampoer still. Full-bodied, bold, and proudly crafted by Karoo Still.

Bitters

An aromatic blend of spices gathered from around the world, including cubebs from Java, grains of paradise from West Africa, vanilla from Madagascar, cinnamon from Sri Lanka, and quinine from South America. Slowly macerated in high-proof spirit, naturally extracted over weeks. No colourants or artificial additives used. Best stored in a cool, dark place — and give it a shake before pouring, as real ingredients may settle.
